Polenta helps you see in the dark

Yellow is the new green, according to research in the Journal of Agricultural and Food Chemistry, which found that foods made from milled yellow corn, such as polenta, have real health benefits. "It is easier to digest the carotenoids from milled corn foods than those in carrots and spinach," says Dr Mario Ferruzzi of Purdue University. Carotenoids are vital for immune function, healthy cell growth and night vision. And because carotenoids are fat soluble (easier to digest eaten with fat), serve your polenta with a knob of butter.
